  Vegan Delectable: Vol II

This creamy lentil soup with carrot dumplings will liven your days and fill you with summer bliss!



4 STEP INSTRUCTIONS  - Quick and easy!

STEP 1    Creamy Lentil Soup Ingredients

1 cup lentils soaked overnight      1 tsp minced garlic     1/2 cup diced onion

1/2 cup coconut milk                  1/2 tsp salt                1/2 tsp sugar

1 cup minced beefsteak tomato     1 tbsp butter             2 tbsp canola oil

1/4 tsp black pepper                   1/2 tsp thyme            1 tbsp soy sauce

4QT Pot, Pot Spoon And Cutting Board Needed.


STEP 2     Cook Creamy Lentil Soup

  1. Place lentils and other ingredients in pot.

  2. Boil in 3 cups of water 20 minutes on medium heat.

  3. Pour into blender and blend to a creamy consistency

  4. Return to pot with 2 cups of water.

  5. Boil for 40 minutes on low heat until soup thickens.

  6. Taste for balance of flavor.

STEP 3     Carrot Dumpling Ingredients

1/3 cup pureed carrots          1/4 tbsp of sugar             1/4 tsp of salt

1 cup organic wheat flour     1/4 tsp baking powder     1/4 tsp baking soda

1 tsp vegan butter    


STEP 4    Cook Carrot Dumplings

  1. Add flour, baking soda and baking powder in bowl.

  2. Add melted butter and other ingredients.

  3. Mix into a firm dough and let sit for 10 minutes. 

  4. Spoon tiny portions into boiling soup and cover.

  5. Cook dumplings for 7 minutes
